Honey Rhubarb Jam-Refined Sugar Free (GAPS, AIP)
Homemade Honey Rhubarb Jam from a lovely rhubarb plant in our garden space.
Benefits of Rhubarb:
Rhubarb contains fiber, protein, vitamin C, vitamin K, B complex vitamins, calcium, potassium, manganese, magnesium, beta-carotene, lutein, and zeaxanthin. It is high in antioxidants so it's good for inflammation and your immune system.⠀The fiber is beneficial for gut health. Vitamin K is brain and bone protective, so it helps prevent neurodegeneration.⠀The trace minerals in rhubarb support circulation. Beta-carotene is a precursor to vitamin A which supports skin and immune systems.
Honey Rhubarb Jam

Servings: 1 pint sized jar of jam
Ingredients:
- 3 cups chopped rhubarb
- 1 cup honey
- 2 tbsp Chia seeds (optional)
Instructions:
- Chop rhubarb and add to a small pot with 1 cup honey.
- Bring to boil and simmer for about 15 minutes or until desired consistancy. It should start to thickend and smooth.
- Transfer to jars and mix in chia seeds if desired. Keep in fridge for up to 3 weeks or longer in the freezer.
