Crispy Oven Baked Chicken- grain free, paleo, Full GAPS, nut-free, keto

This is one of my favorite recipes that reminds me of my junk food days at the same time as it fulfills the best nutritional needs for acne and gut healing. I hope you enjoy it!

Why grain-free?

This childhood favorite crispy chicken recipe is grain-free for acne and gut health. Lower glycemic diets help lower inflammation in the body. Grains are also high in complex carbohydrates that can be difficult for your gut bacteria to digest, leading to leaky gut and food sensitivities. Low glycemic grain-free recipes help to starve out unwanted bacteria while you focus on healing and sealing the digestive tract, replacing it with more beneficial bacteria from fermented foods, and then ultimately you will restore the balance with prebiotic foods and more fiber-rich foods. Grains aren’t all bad, they just might not be what your gut bacteria need right now.

Why nut-free?

Nuts are difficult to digest and contain anti-phytonutrients (nutrients that are harmful to the human digestive system) like phytic acid and oxalates. These anti-phytonutrients can contribute to inflammation in the digestive system and decrease the absorption of nutrients. Some people can’t tolerate nuts at all, however, all people should work towards properly preparing their nuts, seeds, grains, and legumes by soaking them prior to preparing them.

Benefits of Chicken, Eggs, and Pork Rinds

The ingredients in this recipe are incredible for gut health, hormone health, and acne for a few reasons. Chicken, eggs, and pork contain easy to digest proteins that will benefit every cell in your body. Chicken and eggs also contain high amounts of B12 which is necessary for thousands of detoxification reactions in your body. B12 is also necessary for producing more red blood cells which carry oxygen to cells for energy production.

Low B12 symptoms are fatigue, anxiety, and dizziness. Always look for pastured chickens from local farmers first before you purchase organic free-range from the grocery store. This is because there is a lot of marketing that is behind food labels in the groceries. You will feel much better about talking directly to a farmer. Here are some great farms that ship to you:

Pork fat in the pork rinds are high in monounsaturated fats (just like olive oil) as well as the fat-soluble antioxidant vitamin D. There are receptors for vitamin D on every cell in your body, meaning there are thousands of gene expressions and cell functions dependent on adequate vitamin D levels, especially your immune system. Low vitamin D has been linked to leaky gut, autoimmunity, diabetes, and more.

Crispy Oven Baked Chicken

Paleo - grain free, full GAPS, nut-free

  • cook time: 40 min

Ingredients:

  • 1 lbs chicken legs, thighs, or breasts
  • 2-3 eggs, scrambled
  • 1/2 cup coconut flour
  • 1 bag pork rinds, ground into flour (I like this brand)
  • seasonings of choice (oregano, thyme, rosemary, chili powder, cayanne)

Instructions:

  1. Pre-heat oven to 425 degrees.
  2. Wash chicken and pat dry.
  3. Mix scrambled eggs in a bowl for dipping, set aside.
  4. Put coconut flour in another bowl or deep plate, set aside. Place the ground pork rind flour and seasonings of choice in a separate bowl or deep plate.
  5. Coat the chicken in the coconut flour, then dip in the egg wash, then lastly coat with pork rinds. Place coated chicken on baking sheet.
  6. Bake in the oven for 20 minutes then flip the chicken and bake for another 20 minutes.
