Beet Pancakes
Paleo, Dairy-Free, and Gluten Free

Ingredients:
- 1-2 medium beets roasted or steamed
- 1/2 c coconut milk
- 1/2 c coconut flour
- 1/4 c casava flour (or nut butter for GAPS version)
- 1/2 tsp baking pwder
- 6 eggs
Instructions:
- Mix all ingredients in a blender or food processor, making sure the beets are thoroughly blended.
- Heat a skillet with some coconut oil on medium-low heat.
- Pour out your perfect size pancakes and cook for 3-5 minutes on both sides (these pancakes need low heat to cook all the way through)
- Enjoy with your favorite toppings: fresh fruit, yogurt, honey, and coconut are my favorites!
