Goat Cheese Frosted Carrot Cake

Paleo, GAPS, and Gluten Free

Goat Cheese Icing:

Ingredients and Directions

  • 8 oz of plain Goat Chevre
  • 1/2 cup Honey or Maple syrup
  1. Let chevre sit at room temp to soften
  2. Add sweetener slowly while mixing until desired sweetness and consistency

Carrot Cake:

Ingredients and Instructions

  • 4 eggs
  • 4 flax eggs ( 1 tsp Flax + 1 tsp water per egg)
  • 1/2 c coconut milk or raw milk
  • 1/2 c coconut flour
  • 1/2 c green banana flour (substitute with 1 ripe banana for GAPS version)
  • 2 tbsp coconut oil
  • 2/3 c maple syrup or 3 tbsp of RAW honey
  • 2 cup grated carrots
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 2 tsp apple cider vinegar
  • 2 tbsp of cinnamon
  • 1 tsp nutmeg
  • 1/2 c walnuts (whole or chopped) (optional)
  1. Preheat oven to 350 degrees F
  2. Make Flax eggs mixing the water and flax, let sit for a few minutes
  3. Mix together all other cake ingredients
  4. Add in flax eggs.
  5. Grease round or square 9" baking dish with coconut oil
  6. Pour in batter and bake for 45 min.
  7. Let cool then ice with the goat cheese frosting.
