Goat Cheese Frosted Carrot Cake

Goat Cheese Icing:
Ingredients and Directions
- 8 oz of plain Goat Chevre
- 1/2 cup Honey or Maple syrup
- Let chevre sit at room temp to soften
- Add sweetener slowly while mixing until desired sweetness and consistency
Carrot Cake:
Ingredients and Instructions
- 4 eggs
- 4 flax eggs ( 1 tsp Flax + 1 tsp water per egg)
- 1/2 c coconut milk or raw milk
- 1/2 c coconut flour
- 1/2 c green banana flour (substitute with 1 ripe banana for GAPS version)
- 2 tbsp coconut oil
- 2/3 c maple syrup or 3 tbsp of RAW honey
- 2 cup grated carrots
- 1 tsp salt
- 1 1/2 tsp baking soda
- 2 tsp apple cider vinegar
- 2 tbsp of cinnamon
- 1 tsp nutmeg
- 1/2 c walnuts (whole or chopped) (optional)
- Preheat oven to 350 degrees F
- Make Flax eggs mixing the water and flax, let sit for a few minutes
- Mix together all other cake ingredients
- Add in flax eggs.
- Grease round or square 9" baking dish with coconut oil
- Pour in batter and bake for 45 min.
- Let cool then ice with the goat cheese frosting.
