Vibrant Coconut & Beet Panna Cotta- Gut Healing Snack
Beets are hands down one of my favorite foods and so is coconut!! I was inspired to use some of the raw beet powder that I get from Citrisafe at Red Tail Wellness Center after stumbling across reallifeofpie’s Coconut and Matcha Panna Cotta recipe.
I wanted to use a more nutrient-dense food powder, like beets, to help support liver and gallbladder function while also satisfying my sweet tooth. If you love creamy textures and sweet things that are beautifully colored, you will love this recipe!
Beets and Blood Pressure
Beets have a ton of benefits to your health. They are root vegetables which contain many micronutrients like minerals and vitamins that are supportive to detoxification, bile flow, and even regulating blood pressure. This new article discusses the benefits of beet juice in the diet and its affect on lowering blood pressure. Beets are high in nitrates which are actually converted in the body to nitric oxide which helps vasodilation. This increases blood circulation, so if you are like me and have frigid cold hands and feet and poor circulation, beets are your friend.
Gelatin and Gut Healing
I stumbled across the panna cotta recipe when I was searching for more ways to get gelatin in my diet for more gut healing. Gelatin is a gut-healing protein that is found in meat stock and animal protein. It has been shown to protect the lining of the digestive tract and provides essential amino acids necessary for rebuilding the digestive tract. I’m also Italian and have never had real panna cotta before so this recipe was a fun fantasy treat!
I enjoyed this as a snack or dessert without guilt, knowing that I was nourishing my gut to heal my skin and acne.
Vibrant Coconut & Beet Panna Cotta

Servings: 2
Ingredients:
- 1 cup coconut cream/ or thick milk
- 1 1/4 tsp gelatin
- 2 Tbsp filtered water
- 1-2 Tbsp raw honey
- 1 1/2 tsp organic Raw Beet Powder
- 1/2 tsp vanilla
- Optional add in or replacement: Food grade peppermint, rosemary, or basil esential oil; or replace beet powder with cacao, spirulina, or other nutrient dense powder
Instructions:
- Add gelatin, water and beet powder together in a small saucepan. Blend together to make a paste with a spoon and set aside to allow gelatin to bloom and thicken.
- Add all other ingredients to saucepan and heat on medium-low for 2 minutes. Make sure all ingredients are evenly combined.
- Taste and adjust any other flavors or sweetness to your liking.
- Pour into a glass jar and place in fridge to set.
- Let chill for 3 hrs before enjoying!
Note: You can replace the beet powder with raw cacao powder or other flavors you like!
