Lemon Scones (grain free, AIP, Full GAPS)
We all reminisce about the foods that we used to eat.
Maybe we will get to eat them again someday… but until then, here is a classic grain-free lemon scone to go with your tea every once and a while.

Lemon Scones (grain free, AIP, Full GAPS)

Servings: Makes about 8 scones
Ingredients:
- 3/4 C coconut flour
- 1/2 C tapioca flour
- 1/4 tsp sea salt
- 1/3 C honey
- 1/4 C melted coconut oil or ghee
- 2 eggs- Pastured raised
- 1 tsp vanilla
- 1/4 C lemon juice
- 1 lemon, zested
Instructions:
- Preheat oven to 375 degrees F.
- Mix all dry ingredients in a large bowl.
- Melt coconut oil with honey and mix all wet ingredients in another bowl.
- Add wed ingredients to dry.
- Shape into a large disc on a baking pan.
- Bake for 20-25 minutes.
