"Kraut" Crackers: Paleo, Gluten Free, Dairy Free

These crackers have a reminiscent flavor and texture of the not-so-gut-healthy Triscuits most of us grew up eating! “Kraut” Crackers are beneficial to the gut by way of organic ingredients and they are less processed. To make these crackers, we use a process of soaking and dehydrating, and using live fermented foods helps add additional bio-available vitamins and nutrients.

You will need:

  • food processor

  • food dehydrator

  • Pre-made Sauerkraut

  • At least 2 1/2 cups of Raw Sunflower seeds (more for a larger batch)

  • Himalayan or Celtic salt

  • 1 tbsp flax meal (optional)

  • garlic (optional)

Directions:

  1. Begin by soaking the raw sunflower seeds in filtered water and a tsp of salt for at least 2 hrs. This begins the sprouting process and unlocks the seed for better absorption of its nutrients.

  2. Strain and rinse the sunflower seeds.

  3. In a food processor, blend 2 1/2 cups of sunflower seeds with 1 cup of kraut (try to strain out the juices) until it clumps together and is blended finely. (you can add extra spices or 1 tbsp of flax meal here too for added omega's)

  4. Spoon your mixture of cracker 'dough' onto the dehydrator sheet. Spread it and make sure it is flattened to 1/8-1/4 inch thick. Pre-cut the cracker squares with a pizza cutter or knife.

  5. Repeat steps 3-4 until all your ingredients are spread onto the dehydrator sheet.

  6. Dehydrate in your dehydrator at 125 Degrees for 12-15 hrs.
