Ingredients:
- 2 pounds organic carrots
- 1 onion
- 2 cups (1 can) coconut milk
- 2 tsp curry powder
- 1 tsp cinnamon
- 2 quarts of chicken meat stock or bone broth
Instructions:
- Chop all vegetables into uniform pieces
- Start to bring to boil the stock in a medium-large pot
- Put all the vegetables into the stock that is heating up
- Once it starts to boil, add the spices and put a lid on. You can bring down the heat to medium and let cook for 20-30 minutes
- Once vegetables are soft, add in the coconut milk and stir.
- Blend the soup with an immersion blender or transfer to a vitamix.
- Serve with cinnamon and paprika or fennel seeds
